  • 1 cup semolina
  • ¼ cup yogurt
  • ¼ cup chopped capsicum
  • 1 large onion chopped
  • 1 large tomato chopped
  • 2 green chilies chopped

Instructions
  1. In a big bowl, take 1 cup of semolina, also known as Rava. Into this add ¼th cup of yogurt and mix well.
  2. Here, keep on adding water, at least 1 cup and stir the batter consistently. Keep it aside for at least 20 minutes.
  3. Add all the veggies ( capsicum, onion, tomatoes, green chilies, ginger and coriander leaves) and mix everything well. Let the veggies get drowned perfectly in the batter.
  4. You might need to add some water again, its okay. You can always add ½ cup more water if need be.
  5. Rava tends to soak water in time.
  6. Now, take a non-stick pan and turn on the heat to high. Drizzle few amount of oil on it and allow it to get warm.
  7. Now, take some batter in a ladle and pour it into the pan. Pour some oil on the sides of the uttapam and give it 2-3 minutes or so to cook nicely.
  8. Flip it and allow it cook on the other side as well.
  9. Now, take it out on a plate and serve it with coconut chutney or tomato ketchup.

  • 1 medium onion chopped
  • 1 large potato diced
  • 2 green chilies chopped
  • 5-6 curry leaves

  2. Take a kadhai or a pan and turn on the flame to high. Add some edible oil and let it get warm.
  3. Now, throw in some mustard seeds, peanuts, green chilies and curry leaves to it and let them all splutter. Mix everything well.
  4. It's time to add all the masalas (salt, red chili powder, turmeric powder) and mix it all well. Sprinkle some water; you might need it here, as you do not want to burn the masala.
  5. Here, add the washed and drained poha and mix it all properly for a minute. (Remember, if you do not want the poha to get all clumsy, you can always wash and drain it right before the masala is preparing)
  6. The best part is poha do not need to much cooking time from you. You can turn off the gas couple of minutes later only.
  7. Squeeze a lemon and garnish some fresh coriander leaves onto it.
  8. Dish it out as it is. Poha goes perfectly with ginger tea.
  9. Your Poha Recipe is now ready. Serve it hot.

  • 3 cups Dried Macaroni
  • 2 tbsp Oil
  • 1 tbsp Ginger grated
  • 1 Chopped Onion
  • Two chopped chunks of tomatoes
  • ½ cup Chopped Carrots
  • ½ Cup Capsicum
  • 2 tbsp tomato ketchup
  • Salt as required
  • 1 tbsp Red chili powder
  • ½ tsp Turmeric powder
  • 1 tbsp garam masala powder
  • 1 tbsp mayonnaise (optional)
  • Chopped Coriander leaves
  • Green chilies (optional)
Instructions
  1. Boil Dried Macaroni: Take one large pot and add 7-8 cups of water and let it come to boil. Now, add dry pasta to it with some salt and 1 tbsp of oil. It will prevent the macaroni from sticking to the pot and also helps quickly boil them. After ten mins, you will see macaroni is done, drain the excess water and keep it aside.
  2. Prepare the sauce: Take a pan and turn on the heat. Add 2tbsp of oil and allow it to heat enough to proceed further. Now add grated ginger and stir for 1 min, then add chopped onions to it and stir again for 2-3 mins.
  3. We do not need to burn the onions or give them any goldenish color, once they are translucent, you can throw in all the veggies and give it a good mix for a couple of minutes. Do not overcook the vegetables ever in pasta, let them be raw a bit if need be because you do not need your dish to look soggy.
  4. Add all the powder masalas into it, Salt, red chili powder, garam masala and turmeric powder.
  5. Now it is optional to add mayonnaise, cheese or butter, whatever is best available to you. It gives a twist to Indian style cooking. And mix it well. Add ketchup and give the sauce about five mins to cook well. You can sprinkle some water if the sauce is getting dry.
  6. Add boiled macaroni to the sauce now and high the flame. Mix everything very well. Garnish with coriander leaves and let it cook for 3-4 mins more.
  7. Turn off the flame and allow it to settle down. Take out in a dish and serve as it is.
Notes
For smooth and creamy sauce results, always add ketchup even if you have added tomatoes as well. It gives that buttery texture to the sauce and makes the macaroni moist and flavorful.
