Chicken Fry Recipe: How to Make Chicken fry

Chicken fry recipe has many different varieties, and both south and north sides of the nations have their unique style of cooking chicken fry. Chicken fry recipe is easy to follow and do not involves a lot of ingredients; in fact, it is all about the marination, which is your choice of the matter. When I tried cooking it for the first time, I preferred shallow frying of the chicken pieces will appear more like tikkas and less like fried chicken. Some people tend to cook it like fried vegetables in hawk, which also is a different style of preparing it, but it is not apparently chicken fry.

If you are aware of a pakora recipe or how to make pakoras, then you will surely be able to crack the code. Fried chicken has to be prepared in the same way. The marination should be about 2-3 hours straight. And I tend to add all purpose flour and cornflour in the marination only. Being allergic to eggs, I do not add eggs to it, that's why flour helps as a second alternative to me. Chicken fry is supposed to be simple, hassle-free and a delicious recipe. So, now let's see what ingredients do we need in chicken fry recipe.

  • For marination purpose-
  • 250 gms boneless chicken
  • 2 tbsp oil
  • 8-9 peppercorns
  • 1 cinnamon stick
  • 2-3 cloves
  • 3 cardamom
  • 1 tsp coriander seeds
  • 5-6 garlic cloves
  • 1 large piece of ginger
  • 2-3 broken chilies
  • 2 tbsp beaten yogurt
  • Salt to taste
  • ½ tsp Red chili powder
  • 1 tsp degi mirch powder
  • 1 cup cornflour
  • ½ cup Maida
  • chopped Coriander leaves
  • For Frying purpose-
  • Enough Oil for frying
  1. How to make Chicken Fry :
  2. First of all, take a kadhai and heat it up on a medium flame. Here, we will saute whole spices without using oil. So, add all the above mentioned whole spices ( peppercorn, cinnamon, cardamom, cloves, coriander seeds), garlic cloves and ginger, broken chilies.
  3. Toss everything for about 5 minutes on a low to medium flame. Be sure that garlic does not burn. Otherwise, it will destroy the flavor of the fried chicken.
  4. Turn off the heat and take it out on a plate and allow it to cool down for a while. After some time, blend it into a smooth ground powder and keep it aside.
  5. Now, take a big bowl and add washed boneless chicken and yogurt into it, ground powder, salt to taste, red chili powder, degi mirch powder and the prepared ground powder into it and mix well.
  6. Now, add both cornflour and maida and some edible oil into it and mix it well. Use hand to mix it properly.
  7. Keep the marination aside for about 2-3 hours in the fridge.
  8. After 3 hours, take it out and let it rest. Now in a kadhai, pour a right amount of edible oil and allow it to heat up.
  9. Now, slowly and carefully start drowning marinated chicken in the oil and fry it till it is golden brown.
  10. Take the fried chicken out on a tissue or absorbent paper.
  11. Serve fried chicken with mint chutney or ketchup and onion rings on the sides.
