Directions
Gutti Vankaya Kura also known as Stuffed brinjal curry, is a famous south Indian recipe that is prepared in various manners, yet it turns out delicious and healthy as always. North Indians are more convinced by baingan ka bharta, yet in the south side, you will find Gutti Vankaya Kura or stuffed brinjal curry gave more importance, be it Andhra Pradesh, Karnataka, or even Hyderabad. I am sharing this recipe the way I learned a few years back.

Now, for the stuffing, we need to take a pan and heat it on a medium flame. Add peanuts to it and toss for a minute. Later on, add sesame seeds, coriander seeds, cumin seeds, coconut powder and stir again for a minute or two. Do not burn it, keep sauteeing. |

Now, take out in a blending jar and add lemon juice, salt, turmeric, red chili powder. Add 2-3 tbsp of water only, just enough to blend it into a smooth paste. |

Once, it is done take it out in a dish and start stuffing it into brinjals and keep them aside. Make sure to use some extra stuffing for the curry as well. |

Now, once the oil is hot enough, add chopped onions and fry them till light brown. Later on, add ginger-garlic paste and green chilies in the kadai and saute it for a while. |

Now, add the saved stuffing in the masala and mix everything well. Add a little water and brinjals to the masala and cover it. Cook it for about 5 minutes and then open the lid again. Mix it again, and now you will see that the gravy starts to thicken up. |

If brinjals are not cooked yet well, add little more water and cover it up. Cook for another 10 minutes and open the lid. Add garam masala and chopped coriander on top. |

You can serve it with some hot steamed rice like the south Indian style or Akki Roti. You can also serve it with healthy wheat dough Rotis. Hyderabadis love to eat stuffed brinjal curry with biryani as well. |
